Summer cocktails with The Hearty Boys' Steve McDonagh

Ryan was mixing, shaking, and blending up some tasty summer cocktails with Steve McDonagh of The Hearty Boys. Try your hand and preparing them using the recipes below:

Texas Sangria

  • 1 bottle dry red wine (750 ml)
  • 3/4 cup vodka
  • 3/4 cup jalapeno syrup (see recipe)* 1/4 cup clove tincture (see recipe)
  • 1 1/4 cup Tamarind Soda (available in most Mexican markets)
    Jalapeno Syrup:
  • 2 cups sugar
  • 1 cup water
  • 2 whole fresh jalapenos

Slice jalapenos lengthwise in half and scoop out seeds and inner membrane for disposal. Slice jalapenos into 4-6 long slices.

Clove Tincture:

Place 20-30 cloves and 1/2 cup of tequila in a container with a tight lid. Store overnight in a cool dark place. Shake before using.

Note: The longer the clove is in the vodka the stronger the extract becomes. A tincture left for a few days will be very strong and the amount called for in the recipe will need to be adjusted down (to taste).

Combine wine, vodka, syrup and clove tincture in large pitcher with ice. Serve over ice in tall wine glass garnished with fresh lime wheel.

    Grilled Peach Frappe
  • 1 Peach
  • 3 oz Southern Comfort
  • 2 Ts Raw Sugar
  • 2 Tb Fresh Lime
  • 2 Tb Fresh Lemon
  • 1/4 Ts Pure Vanilla Extract
  • 1 Cup Ice

Cut peach in half, remove pit and place ungreased on hot grill. Create deep checkerboard hash marks for best flavor. Remove peaches from grill and place in 350 degrees oven for approx 10 minutes or until a knife easily pierces the skin. Allow to cool and remove peach skin with peeler. Place ingredients into blender and blend on high for approximately 10-20 seconds. Serve immediately in chilled glasses. Garnish with slice of fresh peach.

Yield: 2 cocktails

Desert Healer

  • 1.5 ounces Gin
  • .5 ounce Cherry Heering
  • 1.5 ounce Orange Juice
  • Ginger Beer

Combine the Gin, Cherry Heering and OJ in cocktail shaker filled with ice. Shake well. Strain into a tall glass filled with ice, top with Ginger Beer (about 3 - 4 ounces), and serve ungarnished.

Yield: 1 cocktail

An an extra one for good measure:

Paloma

  • 2 ounces tequila
  • 1/2 ounce fresh lime juice
  • pinch of salt
  • Tamarind soda

Combine the tequila, lime juice, and salt in a tall glass. Add ice, top off with Tamarind soda and stir. This drink is traditionally made with the salt in the drink as opposed to around the rim of the glass and is the preferable method.

Yield: 1 cocktail
